- 6 ounces of blackberries
- 1/4 cup of water
- 2 tbsp. of white wine vinegar
- 1 tbsp. of sugar
- 2 tbsp. of cold butter
- 1 tbsp. of whole-grain mustard
- 4 chicken thighs
- 4 drumsticks
- Kosher salt
- Black pepper
- Fresh parsley
Instructions:
- Preheat your grill to medium heat.
- Combine the blackberries, water, white wine vinegar, and sugar in a saucepan.
- Bring to a simmer, mashing occasionally, until liquid for 18 to 20 minutes.
- Stir in the butter and whole-grain mustard until combined.
- Transfer half the glaze to a bowl to reserve.
- Pat chicken thighs and drumsticks dry.
- Season the chicken with kosher salt and black pepper.
- Grill the chicken, skin-sides up, and cover for 15 minutes.
- Uncover and baste with some of the glaze.
- Grill the chicken, turning and basting occasionally, until cooked through or for 10 to 12 minutes.
- Sprinkle with fresh parsley and serve with the rest of the glaze.
